The cover, as it is understood today, is born in a modern age after the period of scarcity caused during the Spanish civil war, although it may be thought that it is an old custom in Spain to feed on small snacks with which to eliminate hunger. The lid evolves from a more appetizing form.

Going for tapas is one of the most rooted Spanish traditions in terms of gastronomy.

The tapas mix the concept of eating with that of socializing, which is why the lid is linked to the act of 'tapping'. The bars, understood as places of meeting, are the ideal space for the 'tapa'. From this concept come the verbs: 'tapas' (eat tapas), 'tapas go' (go roaming through various bars).
Even tourist companies offer on their routes the tasting of a drink with cap included, as something typical of the place.

The variety of tapas is large and will depend largely on the Spanish culinary region where the diner is. There is no canon that mentions anything about the size of the lid, but in most cases it reaches a few bites. In addition to these regional characteristics there are other categories such as: tapas served cold, which are served hot.

In Toledo there are many places that you can enjoy some very exquisite tapas, especially this month of November where will take place the XVII Days of the Cover of Toledo between the 10 to the 27 of November.

The proposed tapas will be elaborated with products derived from the hunting, olive oil DO Montes de Toledo and / or based on the kitchen of the Quijote, many are the bars and restaurants of Toledo participants of the day.
